Although beef liver sounds disgusting, this recipe for liver and onions will elevate the humble meat into a culinary masterpiece!
How is Liver Supposed to be Cooked
Similar to how to cook beef heart, this dish takes only a short amount of time to prepare. In order to keep it moist, you must use something in the pan, preferably butter or olive oil. The most widely used technique typically involves seasoning onions with salt and a little sweetness, like brown sugar. Although it does have a strong flavor, not everyone likes organ meat.
You can kind of balance the strong beef flavor by sautéing it with a sweet and savory combination of flavors. You should use yellow onions, though finely chopped garlic would also be excellent. Salt and pepper are really all you need to season the meat with. The best way, in my opinion, is to coat it with flour, which will result in a nice crust.
Should Beef Liver be Soaked Before Cooking
Um, yes. Additionally, this will assist in taming the strong liver flavor. Some prefer buttermilk, a long time, raw milk, etc…. For my husband, I have to use a lactose-free version of Lactaid, and that also works for this. For this batch we used the following ingredients;.
- 2 lbs of fresh or thawed liver; never use frozen beef for this.
- Salt
- Paprika
- 1/2 tsp coriander
- 3 tbsp olive oil
- 6 tbsp all purpose flour
- If you need to soak it in milk, use one cup of milk or a dairy-free variety.
When cooking organ meat, it is ideal to make a batch of caramelized onions while your meat is resting. I mean they’re a must y’all. Don’t start counting calories like at this point. .
- A yellow or white thinly sliced onions
- Brown sugar
- A few tablespoons of butter, salted is best
How Long to Pan Fry Liver
You only need about 6 minutes. Soak the liver slices in a bowl submerged in milk. Give it a rest for 20 minutes (or an hour or two in the fridge). Add salt and spices to the flour in a separate bowl, then combine.
- Slices of liver should be taken out of the milk, dried, and cut into 2-inch pieces.
- Cover the liver pieces completely and evenly with flour.
- Place the liver pieces in a pan with already-heated olive oil over medium-high heat.
- 3 minutes on one side and 2–3 minutes on the other side in a large skillet. The liver will continue to be very soft and pink inside this way. Total timing depends on thickness of course.
- The thickest portion of organ meat needs to be 160°F internally. Recall that proteins will rise another 5 degrees while they sit, but much higher temperatures will cause it to dry out and become too firm.
- To remove extra oil, move the fried liver to a napkin.
- The onion should be cooked in melted butter until soft and caramelized.
When the sugar has melted completely, add sugar and continue to cook the onion for an additional 3–4 minutes. Sliced over the top of them, place the onion on a plate and serve.

It may sound absurd, but chicken should be the right color, with uniform veining, just like chicken. When touched, the exterior texture should be springy and not depress and remain there. And then there is the scent. It will have a natural odor, but it shouldn’t have a rancid odor.
You might want something other than just onions when you eat liver. Typically, this will be served alongside or on top of a bed of potatoes or something similar to our mashed potato balls. A serving of roasted vegetables, a side salad, or cauliflower rice may be a lower-carb, healthier option.

If you only have the meat, tightly wrap it in foil. freeze for up to three months or keep in the refrigerator for up to three days.
