- Turkey: I use 93% lean ground turkey for this recipe. You could probably sub ground chicken if youd like. If using ground beef, make sure to remove any surplus grease.
- Cooked rice: Please make preparations in advance as the rice for this recipe must be cooked when it is stirred in at the end. You can use leftover rice or begin cooking your rice first.
- Rice: White rice works well here too, but I prefer brown rice. You could even use a quick-cook rice if you prefer.
- Our favorite beans are black beans, but pinto beans are a good option as well. Kidney beans would also work here.
- Diced tomatoes: While regular diced tomatoes work just fine, I really enjoy fire-roasted diced tomatoes for a little extra kick. Another option would be to use diced tomatoes with green chilies or a can of Rotel.
- Corn: I always have some on hand, and frozen corn works great in this situation. Other options include fresh corn, a small can of white or yellow corn, or a can of Mexicorn. You’ll need about 1 cup.
Oh, and the recipe calls for 1 chicken bouillon cube or subbing 1 teaspoon of chicken base. I always have a small container of those cubes available, and they truly do enhance the taste.
However, you can definitely skip it if you don’t have either of those in your pantry. I realize it’s a less common ingredient for most people.
