That job is done at the first processor, right off the boat. Not every order comes with knuckles, but most do need some smaller pieces to make weight because you can’t always hit 3 pounds with just legs. We can’t refund or reship this order because it fits the description on our website and has the right amount of pounds, as shown by the 3Lb label on the bag and the UPS ship weight.
