- Thaw. Follow the steps above to thaw the shrimp, then fill a big pot with water.
- Season. Put in a bay leaf, ½ lemon juice, and 1 teaspoon of black peppercorns. Bring to a boil, then lower the heat to a very low level.
- Boil. After you add the shrimp, cook for about 3–4 minutes, or until they turn pink. Then, drain the shrimp and run cold water over them to cool them down. Chill until ready to serve.

It’s all about how you serve shrimp cocktail, and my favorite way is to keep things simple so they’re easy to nibble on while you drink and talk to other people.
- Leave the tails on. For looks, I always put the shrimp on my platter with their tails on. Put a small dish by the side where the tails can be thrown away.
- Crushed ice makes the base of the platter. My Smith’s (Kroger) has a meat and seafood section where I buy mine. The butcher bags it up for me. You can also do it at home if you have an ice crusher. It melts very quickly, so don’t crush the ice too much.
