- Instead of using ground turkey, substitute ground beef, pork, chicken, or crumbled tofu or tempeh.
- Additional vegetable options include water chestnuts, snap peas, broccoli, carrots, bean sprouts, and mushrooms.

This recipe is excellent for meal preparation, but I advise storing it only in the refrigerator as opposed to the freezer. Freezing will cause the vegetables to soften further and seep more water. This dish will stay good in the refrigerator for about four days.

- 1/2 Tbsp toasted sesame oil ($0.16)

- 4 green onions ($0.22)

- To make the stir fry sauce, whisk together the water, brown sugar, red pepper, toasted sesame oil, and soy sauce until the sugar is completely dissolved. Set the sauce aside.
- Dice the bell peppers and slice the green onions.
- In a very large skillet, heat the cooking oil over medium heat. Once hot, add the ground turkey and minced garlic. Stir and cook for 8 to 10 minutes, or until the turkey is thoroughly cooked and there is no longer any water accumulating at the bottom of the skillet.
- When the turkey has finished cooking and the liquid has evaporated, add the green onions and bell pepper to the skillet. Add the spinach and cook for an additional one to two minutes, stirring occasionally, or until the spinach is just halfway wilted.
- Pour the stir fry sauce into the skillet. Stir and cook the turkey and veggies for a further two minutes or until the sauce coats everything and the spinach is completely wilted.
- About one cup of the stir-fry mixture should be served with half a cup of rice and chopped peanuts on top.
