Preheat oven to 200°C. Place beef on a rack in a roasting pan. Pour some water into the pan’s bottom to prevent any juices from burning while cooking. Put a leave-in meat thermometer into the roast’s thickest part if you have one.

- rare when the temperature reaches 45-50°C
