Choosing Dungeness Crab Legs
The first step to cooking dungeness crab legs in the oven is selecting high-quality crab legs. When possible, opt for fresh crab over frozen. Fresh dungeness crab legs will have a sweeter flavor and firmer texture when cooked. That said, high-quality frozen legs can still yield delicious results. Here are a few tips for choosing dungeness crab legs:
-
Look for legs labeled as “dungeness crab.” Other types of crab legs like snow crab or king crab have a different taste and texture when cooked.
-
Choose legs that are cold, firm, and heavy for their size, which indicates thicker, meatier crab meat.
-
Legs should have a fresh ocean aroma. Avoid any with a strong fishy or ammonia odor.
-
When buying fresh, choose crab legs that are still chilled on ice, not sitting out at room temperature.
-
For frozen, make sure there is no visible frost or ice crystals, which indicates thawing and refreezing.
-
Pick legs with thick, intact shells. Cracked or damaged shells expose meat and leads to drying out.
Preparing Dungeness Crab Legs for Oven Cooking
Before cooking dungeness crab legs in the oven, they need to be properly prepared. Here are the key steps:
-
Thaw frozen crab legs completely in the refrigerator for 24-48 hours. Do not thaw at room temperature or in hot water.
-
Use kitchen shears or sharp knife to carefully cut through shell on the underside of each leg segment. Avoid cutting all the way through the meat.
-
Rinse legs under cold water to remove any shell fragments. Pat dry thoroughly with paper towels.
-
Use a knife or skewer to poke holes in both ends of each shell segment. This prevents cracking during baking.
-
Brush legs lightly with oil to prevent drying out and promote browning. Olive, avocado, or grapeseed oil work well.
-
Season as desired with Old Bay, garlic powder, paprika, salt, pepper, lemon, etc. Seasonings adhere better when legs are lightly oiled.
Properly preparing the dungeness crab legs helps ensure they cook evenly, absorb maximum flavor, and retain moisture in the oven. Now it’s time to decide on cooking method and temperature.
Baking Dungeness Crab Legs Plain
The simplest way to oven-cook dungeness crab legs is baking them plain. Here’s a foolproof method:
-
Preheat oven to 375°F. Line a baking sheet with foil for easy cleanup.
-
Arrange prepared legs on the baking sheet so they are not touching.
-
Roast legs for 14-18 minutes, depending on thickness. Check for doneness after 12 minutes.
-
Crab meat should be opaque and flake apart easily when fully cooked.
-
Serve immediately, providing small hammers, crab crackers, and cocktail forks for cracking open the shells.
-
Provide melted butter, lemon wedges, and/or your favorite sauces for dipping.
Roasting dungeness crab legs plain allows their natural sweet flavor to shine. You can also enhance their flavor by adding seasonings, herbs, butter, or oil to coat the legs before baking.
Baking with a Garlic Lemon Butter
For next-level oven-baked dungeness crab legs, coat them with a garlic lemon butter before roasting. The butter keeps the meat moist while infusing it with incredible flavor.
To make garlic lemon butter:
- Soften 1/2 cup (1 stick) unsalted butter to room temperature
- Mash 4 cloves garlic into the butter until well combined
- Mix in 2 teaspoons lemon zest and 1 tablespoon fresh lemon juice
- Add salt and pepper to taste
To bake crab legs:
- Line baking sheet with foil and preheat oven to 375°F
- Arrange prepared crab legs on sheet
- Brush garlic lemon butter all over top and underside of legs
- Roast 14-18 minutes until opaque and flaky
- Serve with lemon wedges and any remaining garlic lemon butter for dipping
The possibilities are endless when it comes to compound butter flavors. Consider using brown butter, jalapeño lime butter, or even blue cheese chive butter on your dungeness crab before baking.
Oven-Roasted Dungeness Crab with Garlic and White Wine
For a more involved preparation, oven roast dungeness crab legs in a bath of melted garlic butter and white wine. The savory, herbaceous broth permeates into the meat as it bakes, delivering intense ocean flavor.
Ingredients:
- 3 pounds prepared dungeness crab legs
- 1⁄2 cup (1 stick) unsalted butter, divided
- 3 tablespoons extra virgin olive oil
- 10 cloves garlic, minced
- 1⁄2 cup dry white wine
- 2 lemons, sliced
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions:
-
Preheat oven to 350°F. Arrange crab legs over lemon slices in a 9×13 baking dish.
-
In a skillet, melt 1⁄4 cup (1/2 stick) butter with the olive oil over medium heat.
-
Add garlic and cook until fragrant, about 1 minute.
-
Pour in white wine and simmer 1 minute.
-
Pour garlic butter sauce over crab legs and top with parsley. Add salt and pepper.
-
Roast crab legs 15-20 minutes until opaque and flaky.
-
Pour pan drippings into serving bowl. Garnish crab with remaining parsley.
The white wine and garlic sauce seeps into every bite of the crab meat, while the lemon slices provide a bright contrast. Feel free to play around with different herbs, wines, or seasonings in the sauce.
Oven Roasting Times and Temperatures
Here are some general time and temperature guidelines for achieving perfect results when oven roasting dungeness crab legs:
-
375°F is ideal roasting temp for exposed crab legs. Higher risks overcooking meat.
-
Cook frozen legs 5-8 minutes longer than fresh to account for frozen center.
-
Thinner legs take 12-15 mins, medium legs 14-18 mins, thick legs 16-22 mins.
-
Check smaller legs sooner and remove them when done so they don’t overcook.
-
Let crab legs rest 5 minutes after removing from oven as internal temperature rises.
-
Check for doneness by looking for opaque, pearly flesh; flaking apart; and buttery texture.
While roasting times vary, using an internal temperature of 140-165°F ensures safeness. Investing in an instant-read thermometer takes the guesswork out of doneness.
Handy Tips for Oven-Roasted Dungeness Crab Success
-
Choose a sturdy baking sheet or pan to prevent sticking. Line with parchment or foil for easy cleanup.
-
Roast legs on their edge rather than flat to allow steam to escape and air to circulate.
-
Resist overcrowding. Legs need space between them to properly roast. Work in batches if needed.
-
Brush with butter, oil, or glaze about 5 minutes before they are done for sheen and sizzle.
-
Elevate baking sheet on a rack in lower third of oven for best heat circulation.
-
Check halfway through and rotate sheet for even cooking. Return thicker pieces toward center.
-
Meat will continue to cook a bit after removing from oven. Allow a 5 minute rest before eating.
-
Provide nutcrackers, small hammers, and picks for cracking open legs tableside. Enjoy with dipping sauces.
With these useful tips in your toolbox, you’ll be able to consistently nail perfectly cooked dungeness crab legs in the oven every time.
