Cook, breaking up the meat with a wooden spoon and stirring constantly, until the meat is opaque throughout and no longer pink, about five to six minutes. Remove from the heat and let cool slightly.
  • Transfer the turkey to a food processor or blender using a slotted spoon, reserving any leftover meat juices in the pan. Add the apricots, carrots, and about a cup of the meat juices that were set aside. If there aren’t enough reserved juices, add some broth. Puree until smooth or until the desired consistency is achieved.
  • Serve immediately. For storage, place in the refrigerator for up to two days in an airtight container or freeze in individual portions for up to three months.
