Cheesy Gluten Free Shrimp and Grits

I love cheese grits. It’s in my blood. Cheese grits and fried fish are a Southern staple, at least they were in my family. I don’t know why I didn’t make fried fish and cheese grits for this post; it would have been a good idea. Maybe another time.

When I got this month’s American Gluten Free box and saw the grits I knew I wanted to make Cheesy Gluten Free Shrimp and Grits. I’ve been craving shrimp and grits for awhile. I’m a sucker for anything with cheese. Plus, there was Pamela’s cornbread mix. It was a perfect combo.

They were a little different from the grits I usually buy. They are still gluten-free, but they are made from rice instead of corn. I was a bit hesitant at first but turns out they are amazing.

The Delta Blues Rice Grits in this month’s American Gluten Free Box were just as creamy as corn grits but made of United States grown rice. It’s not often that you find American-grown rice, so I was really excited to try them. We are huge rice eaters (blame by Peruvian-Japanese husband, it’s in his blood) so finding a brand that is as local as you can get to us is pretty awesome.

One thing I love about getting my American Gluten Free box every month is that I get to try new brands I wouldn’t have known about otherwise.

That’s why I love these Cheesy Gluten Free Shrimp and Grits: they’re quick and easy. The grits take about 20 minutes (about the same time as rice) and shrimp cook really quickly. It was a very simple dinner. The corn muffins we had on the side also cooked in twenty minutes.

You may have noticed that with my shrimp, there is also some bacon. That’s because I think bacon makes everything taste better! I love the salty bites it gives food. Also, my toddler won’t eat shrimp but will eat bacon, so she had cheesy grits with bacon!
