Recall our spice rub for vegan turkey roast from, like, five hundred years ago? Well, now it’s HER time to shine! Sprinkle and rub the entire mixture over the vegan turkey roast, taking a good whiff as you go, because things are going to smell fantastic in no time!
Blend up the seitan
This is where the meatiness comes in: adding vital wheat gluten to the wet ingredients yields a dough that is extremely high in protein. You can now choose to either hand-knead the vegan turkey dough or—my personal favorite—blend it in a blender. Using a food processor or blender slices the dough and facilitates the alignment of all the protein molecules into long strands. This gives the seitan a stringy gummy texture when raw, but once cooked it becomes VERY meaty.
