The Secret Ingredient: Arrowroot Powder

Instead of wheat flour, this recipe uses arrowroot powder as a thickener. Arrowroot powder is a gluten-free starch that creates a silky smooth gravy without any unwanted grittiness. It’s also a versatile thickener that can be used in various other recipes

Making the Gravy: A Step-by-Step Guide

  1. Gather your ingredients: You’ll need turkey drippings, arrowroot powder, butter or ghee, salt, and pepper.
  2. Strain the drippings: Pour the turkey drippings through a fine-mesh sieve to remove any unwanted bits.
  3. Skim the fat: Let the drippings sit for a few minutes, then skim off most of the fat, leaving just a small amount for flavor.
  4. Make a slurry: Whisk together the melted butter or ghee and arrowroot powder in a small bowl.
  5. Thicken the gravy: Bring the drippings to a boil, then turn off the heat and slowly whisk in the slurry until the gravy thickens.
  6. Season to taste: Add salt and pepper to your liking.

Tips and Tricks for Perfect Gravy:

  • Use a thermometer: To ensure perfectly cooked turkey, use an instant-read thermometer to check the internal temperature. The breast should reach 150-165°F, while the dark meat should be between 165-175°F.
  • Don’t overcook the gravy: Arrowroot powder can become gooey if overcooked. Remove the gravy from the heat before adding the slurry and whisk gently.
  • Adjust the thickness: If you prefer a thicker gravy, add a little more arrowroot powder mixed with water.
  • Make it ahead: This gravy can be made a day in advance using turkey broth instead of drippings. On Thanksgiving Day, add a little turkey drippings for extra flavor.

Serving Suggestions:

  • Drizzle over roasted turkey or mashed potatoes.
  • Use as a dipping sauce for chicken meatballs or fennel pork meatballs.
  • Add a touch of cozy comfort to your breakfast by drizzling it over fried eggs and breakfast potatoes.
  • Pour it over mashed sweet potatoes, mashed cauliflower, or shepherd’s pie.

Finally, an unintimidating recipe for turkey gravy and it’s gluten-free too!

GRAVY IS ESSENTIAL There are lots of dishes you can do without on Thanksgiving. Aside from turkey, of course, most people agree that gravy is a Thanksgiving staple. Personally, I could do without the marshmallow-topped sweet potatoes and the mushy green bean casserole made from a can of soup. Roast turkey is flavorless without gravy, even when cooked to perfection (see my tip for perfectly cooked turkey meat at the end of this post). Because of this, even if your turkey and all the sides are delicious, a bad gravy will make the entire Thanksgiving meal miserable, so as the cook, you are under pressure. Overly complicated gravy recipes are more likely to be mismade, but this recipe for Easy Gluten-Free Turkey Gravy is almost guaranteed to turn out perfectly. It can be made with any amount of turkey drippings; even the drippings from a small chicken or turkey breast will yield a flavorful gravy. This gravy can be made with or without turkey drippings, and the richness can be changed with heavy cream, half-and-half, or milk.

CORNSTARCH VS. I made two types of gravy for Thanksgiving: traditional gravy, which was made with flour, and gluten-free gravy, which was made with cornstarch, after my oldest daughter began avoiding foods that contained gluten. I was shocked to see how little the regular and gluten-free gravies differed from one another—both were equally delicious, silky, and smooth. Since then, the only gravy recipe I’ve ever used for Thanksgiving dinner parties is Easy Gluten-Free Turkey Gravy. There are a few advantages to using cornstarch as a thickener in place of flour when making turkey gravy, even though it is gluten-free.

• To begin with, much less cornstarch is required to thicken gravy because it has twice the thickening power of flour. • Secondly, compared to flour, cornstarch has a milder flavor, which highlights the robust, rich flavor of the turkey.

Note that while cornstarch is made entirely of the gluten-free grain corn, it can potentially become cross-contaminated with wheat if it is processed on shared equipment. If you’re allergic or sensitive to small amounts of gluten, be sure to use only certified gluten-free cornstarch.

TO SKIM OR NOT TO SKIM If you roast a large turkey (or chicken) and use the pan dripping to make Easy Gluten-Free Turkey Gravy, you’ll probably want to skim off some of the fat as larger birds will render more fat. If, however, you use drippings from a roasted turkey breast or small chicken, there’ll be much less fat rendered and you may not need to skim off any at all. In fact, it’s o.k. to incorporate a small amount of fat into the gravy as it’ll give it nice flavor. When you do need to skim off some fat, don’t worry – it’s easy. Before thickening, simply let the gravy mixture sit for a few minutes until most of the fat rises to the top. Then simply spoon the fat off the top. Many people like to use a tool like this – known as a grease separator – but I never go this route because I don’t own one and it would be one more thing to wash!

PERFECTLY COOKED TURKEY Delicious gravy calls for perfectly cooked turkey, but to get properly cooked dark meat without drying out the breast meat can be tricky because the breast and dark meat cook at different rates, leaving little margin for error. The only way to combat this is to use an instant read thermometer. I own a thermapen, which is an expensive meat thermometer used by a lot of professional chefs, but there are less expensive options that work just as well, like this one.

TEST THE TURKEY FOR DONENESS IN DIFFERENT SPOTS Once you suspect your turkey is done, test it with the instant read thermometer in at least 3 different spots. The temperature should be anywhere from 150 degrees F to 165 degrees F or higher depending on the part of the bird. Click HERE to see exactly how it’s done. I share this video every year right before Thanksgiving because it is simply the best demonstration of how to test a turkey for doneness using an instant read thermometer.
