Earlier today, while Eric and I were working at the table, a really awful song began to play on the radio. I started making gagging sounds in the background, knowing it was likely a David Bowie song. (Eric has been obsessed lately). Nevertheless, I lost interest and realized after a few seconds, “Hey, I like this part! This song is okay toward the end!” No, Eric corrected me, I changed the song. This is the Strokes.
Well, so much for that. I thought maybe good ol David was growing on me. I think I’m just not cut out for extreme 80s music.
Over the past few months, Eric has developed an intense obsession with David Bowie, which was probably sparked by this scene from the incredible film Frances Ha, directed by Greta Gerwig, who also did the most recent Little Women adaptation. ) He’s even reading a book all about David Bowie right now. Please understand that I enjoy all of his well-known hits, including the one that plays in that clip, Modern Love. It’s the obscure ones that make me want to claw my eyes out.

Turkey Vegetable Soup Ingredients

- Ground turkey
- Onion
- Garlic
- Seasonings (dried thyme, celery seed, basil, crushed red pepper, black pepper, oregano, garlic powder, smoked paprika, and kosher salt)
- Broth (chicken or turkey broth)
- Carrots
- Celery
- Potato
- Coleslaw mix (or fresh cabbage)
- Canned diced tomatoes
- Canned white beans
- Zucchini and yellow squash
- Garnishes (optional – chopped parsley, pesto, and parmesan cheese)
How to Serve Ground Turkey Soup
I adore adding pesto to this soup as a garnish because it is so flavorful and full of calories from the nuts, cheese, oil, and other high-calorie ingredients. Go figure! Leave it out if you are really counting calories. Parmesan is great on this soup too, but see above about calories. I also love to garnish with parsley, and that one is calorie free basically!.
I promise though, this soup is so good, even without any garnishes or side dishes. It is hearty and will keep you full for hours so you don’t go a-snackin.
Serve this with a mound of Instant Pot Brown Rice, a basket of homemade crescent rolls, or a piece of crusty buttered bread, such as The Best Garlic Bread of Your Life, if you’re not making it for health reasons.
