My second purchase of premium beef belly will not be my last. I applied a beef rub and set my Gateway drum smoker to 300 degrees. Cook like brisket. No wrap needed. Hits 203 after 4 hours. To prepare the sauce, return the meat to the smoker after resting, cubing, and placing it in a foil pan with some sauce. We like it better than brisket flat or point. Makes excellent burnt ends C.
