What To Do With Leftover Beef Broth?

Enjoy this delicious Japanese Mushroom Soup with Beef Broth, which is incredibly simple to make, any time of day!

  • 1 tbsp oil
  • ½ white onion, sliced
  • 1 scallion, chopped
  • 1 clove of garlic, chopped
  • 2 shiitake mushrooms, sliced
  • ⅝ cup beef broth
  • 1¼ cup water
  • ½ tbsp soy sauce
  • salt (to taste)
  • black pepper (to taste)
  • Over medium-high heat, add oil to a skillet and then add the onions and scallion. Cook until onions become translucent. Then add the garlic and continue cooking for a short while before reducing the heat.
  • Add mushrooms. Add water and beef broth after cooking for about a minute. Add the soy sauce, then taste and add the salt and pepper. Stir well and let it simmer for 15 minutes.
  • Garnish with additional scallion before serving. Enjoy!
