Japanese Mushroom Soup with Beef Broth
Enjoy this delicious Japanese Mushroom Soup with Beef Broth, which is incredibly simple to make, any time of day!
- 1 tbsp oil
- ½ white onion, sliced
- 1 scallion, chopped
- 1 clove of garlic, chopped
- 2 shiitake mushrooms, sliced
- ⅝ cup beef broth
- 1¼ cup water
- ½ tbsp soy sauce
- salt (to taste)
- black pepper (to taste)
- Over medium-high heat, add oil to a skillet and then add the onions and scallion. Cook until onions become translucent. Then add the garlic and continue cooking for a short while before reducing the heat.
- Add mushrooms. Add water and beef broth after cooking for about a minute. Add the soy sauce, then taste and add the salt and pepper. Stir well and let it simmer for 15 minutes.
- Garnish with additional scallion before serving. Enjoy!
