  • Our favorite beans are black beans, but pinto beans are a good option as well. Kidney beans would also work here.
  • Diced tomatoes: While regular diced tomatoes work just fine, I really enjoy fire-roasted diced tomatoes for a little extra kick. Another option would be to use diced tomatoes with green chilies or a can of Rotel.
  • Corn: I always have some on hand, and frozen corn works great in this situation. Other options include fresh corn, a small can of white or yellow corn, or a can of Mexicorn. You’ll need about 1 cup.
