When you receive a food item marked “Keep Refrigerated” or “Perishable,” open it immediately and check its temperature. The food should be frozen or mostly frozen, with ice crystals still visible, or at least cold enough to be kept in the fridge (below 40 °F, as measured by a food thermometer).
Always thaw lobster meat if it arrives frozen. This can be done best by putting the meat in the fridge for 24 hours before cooking it.
If you need the meat faster, you can run cold water over the lobster meat for 30 minutes. Be sure the lobster meat is thoroughly thawed. Then, place lobster meat in a colander, and let sit for 30 minutes.
Store in the freezer until youre ready to use/thaw for immediate use. To avoid freezer burn and keep meat fresh, it’s best to keep it in its original packaging (not the shipping box) or put it in airtight freezer bags.
Make sure your freezer temperature is set to 0°F (-18°C) or below to keep the lobster properly frozen. Items frozen can typically remain safe to eat for up to 6 to 12 months. But the quality might get worse over time, so for the best taste and texture, use them within the first few months of buying them.
