One piece of bone and one extended, thick piece of meat measuring roughly 4 inches remain as a result.
For these ribs, the flanken cut is ideal because it keeps the meat juicy throughout the low- and slow-cooking process. Flanken can be found in the meat section of most upscale supermarkets or kosher markets, but you’ll probably need to ask the butcher to cut them for you. Korean grocers also stock them. Oven Barbecued Short Ribs
- 3 3/4 teaspoons mustard powder
- 1 tablespoon brown sugar
- 2 1/4 teaspoons smoked paprika
- 2 1/4 teaspoons cumin
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons onion powder
- 1 1/2 teaspoons dried thyme
- 1 1/2 teaspoons crushed red pepper
- 1 1/2 teaspoons celery salt
- 1 1/2 teaspoons marjoram
- 1 1/2 teaspoons dried oregano
- 3/4 teaspoon black pepper
- 3/4 teaspoon chili powder (mild)
- 3/4 teaspoon dried sage
- 3/4 teaspoon sour salt (or citric acid)
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground coriander
- Heaping 1/4 teaspoon allspice
- 8 rib strips, each with four bones, should weigh 4 pounds and be cut at 1 inch thick.
- 3/4 cup sweet barbecue sauce
- 3/4 cup spicy barbecue sauce
- 1 tablespoon dry rub mixture
- Preheat oven to 275 degrees F. Combine all of the dry rub ingredients in a small bowl and stir until thoroughly combined. Set aside 1 tbsp of rub for later.
- Place the ribs on a sheet tray evenly spaced apart and cover with aluminum foil or a generous amount of nonstick cooking spray. Apply half of the dry rub mixture to one side of the ribs, then flip them over and repeat on the other side. Place the ribs in the oven for 1 hour.
- The ribs should be taken out of the oven and turned over with tongs after an hour. Re-bake for an additional hour, or until nicely browned. Remove the ribs from the oven after the second hour and raise the temperature to 450 degrees F.
- In a mixing bowl, combine the two barbecue sauces with one tablespoon of the dry mix while the oven is heating up.
- Using a basting brush, liberally brush the barbecue sauce mixture onto each side of the ribs.
- Place the ribs back into the oven once it has reached 450 degrees F for a further 2-3 minutes, just until they are crisp on the outside and meltingly tender on the inside. Watch closely to make sure they dont burn. Slice and serve! .
