- 1 tbsp all purpose flour
- 1 tbsp vegetarian Worcestershire Sauce
- 1 tsp mustard powder
- 1 tsp tomato paste
- 1 ½ cup vegetable stock
- Cranberry sauce to serve
- Preheat the oven to 425 degrees
- Cook the Quorn Meatless Roast as per pack instructions.
- In a saucepan with cold water, place the potatoes, bring to a boil, and simmer for three minutes. Add the squash, cook for an additional two minutes, and then thoroughly drain. Put in a baking tray with the rosemary, garlic, and onion. Apply a layer of olive oil and season with black pepper and salt.
- Put in the oven and cook until crispy, about 30 to 35 minutes.
- In the meantime, sauté the onion in oil for ten minutes, or until it is soft and browned, to make the onion gravy. Add the butter and flour and stir for 1-2 minutes. Stir in the tomato paste, mustard powder, Worcestershire sauce, and vegetable stock. Stir well then bring to the boil. Reduce the heat and simmer for 10 minutes. Keep warm until served.
