So, sushi. I love it. My husband loves it. Our teens love it. When I was asked to come up with recipes for Kvarøy Arctic, I knew that their beautiful salmon fillet would be used in a raw or sushi way.

To give basic baked salmon a flavor boost I coat it in a mixture of brown sugar, chipotle chile powder, lime, and salt before baking. The sweet and spicy rub adds big, bold flavor in no time.

Ingredients

  • 3/4 lb salmon fillet (skin on or off)
  • 1 Tbsp brown sugar (optional)
  • 1 1/2 tsp chipotle chile powder
  • Zest of 1 lime plus 1 Tbsp juice
  • 1 1/2 tsp kosher salt
  • 1 Tbsp olive oil or melted butter
  • 3 Tbsp chopped cilantro

  1. Heat oven to 375°F. Line a baking sheet with foil and coat with nonstick spray.
  2. Pat salmon dry with paper towels. Place fillet in center of foil.
  3. In a small bowl, mix together brown sugar, chipotle powder, lime zest and salt.
  4. Brush salmon with oil and lime juice. Sprinkle seasoning mixture on top.
  5. Fold foil around salmon to seal. Bake 12-18 minutes until salmon flakes easily.
  6. Broil salmon 3 minutes until top is golden brown. Check temp – 145°F means done.
  7. Let rest in foil 5 minutes then serve. Top with cilantro.

Tips for making Spicy Salmon Sushi Rolls

  • The rice is sticky! The first few rolls we made weren’t very pretty, and I was starting to give up. But don’t give up! Keep a bowl of water nearby and wet your fingers as you press the rice onto the Nori.
  • Dont over stuff them. You only need a thin line of fillings around which to wrap and roll the nori. Likewise with the rice, just a thin layer.
  • Sharpen your best, sharpest knife before beginning. A thin blade is helpful too. Clean the knife every time you cut the nori so that the cuts are clean and the nori doesn’t tear.
  • Also, remember to plan ahead and put your fish in the fridge to thaw. There is no better way to cut and slice food than when it is still a little frozen. Please be careful with it and don’t let it thaw at room temperature. Safety first with all raw proteins, please!.
