In case you don’t know what adobo seasoning is, it just a blend of spices. Usually it has chili powder, turmeric, cumin, onion powder, garlic powder and some other things so it is a great way to add a lot of flavor. If you can’t find or don’t want to buy another spice/seasoning you can always just taco seasoning or just add some chili powder, garlic, and onion powder to the sauce.
If you have a nut allergy my go to substitute is usually white beans. I like them because they are creamy. I also think tahini could work well here. I would use the same amount of beans instead of the meat, and you might need to add more non-dairy milk or water to make it thick enough for a dip. If using tahini I would suggest about 2 tablespoons and adjusting liquid as necessary.

- ½ cup (60g) frozen or fresh corn
- 1 cup (260g) vegan refried beans
- 1 teaspoon adobo seaesoning
- 10 mini street taco style tortillas
- Spray oil
- ¼ teaspoon chili powder
- Salt & pepper
- ¼ cup (30g) cashews, boiled or soaked overnight
- ½ cup (120ml) nondairy milk, unsweetened and unflavored
- ⅛ teaspoon salt or to taste
- ½ teaspoon adobo seasoning
- 1 teaspoon nutritional yeast
- parsley or cilantro for garnish
- 2-3 green onion chopped, for garnish
