With the exception of being modified for the Instant Pot, I added a few extra ingredients to this recipe (mushrooms, garlic, and Worcestershire), but you can omit them if you prefer.

Any beef cut, including tenderloin, sirloin, and even chuck roast, can be used to make beef tips. If you plan to use pre-cut stew meat from the supermarket, it would be best to purchase a chuck roast and cut it yourself (more cost-effective and allowing for larger chunks).

I typically use sirloin tip roast, and I chop the pieces into roughly 2-inch chunks. Sirloin works well in this recipe and is less expensive than steak tenderloin.

The cook time is key to tender beef tips. It takes time for the cartilage/fat to degrade and tenderize the meat. Consequently, depending on how big you cut the steak cubes, 20 to 30 minutes is ideal.

This recipe for pressure-cooked beef tips yields a delicious and rich gravy. Although more beef broth can be used if you don’t want to use red wine, it does add a lot of flavor.

You should serve this gravy over mashed potatoes, but it’s also delicious over rice, cauliflower rice, mashed cauliflower, and biscuits.

How Long To Cook Beef Tips In Instant Pot?

Beef tips that have been braised and pressure-cooked in a delicious gravy are known as Instant Pot Beef Tips. Serve these incredible beef tips from the pressure cooker with rice or mashed potatoes.

  • 3 Tablespoons Flour
  • 2 teaspoons Steak Seasoning
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 ¼ teaspoons Kosher Salt
  • ½ teaspoon Pepper
  • To Brown the Beef

  • 2 lbs Beef Sirloin Roast, cut in 2″ cubes
  • 2 Tablespoons Olive Oil
  • Gravy

  • 2 Tablespoons Butter
  • 1 Onion, chopped
  • 2 lg cloves Garlic, minced
  • cup Red Wine (or use beef broth)
  • 1 teaspoon Beef Bouillon
  • 1 (10.5) oz can Beef Consommé
  • 1 Tablespoon Worcestershire Sauce
  • 1 teaspoon Thyme Leaves (not ground)
  • Instructions Make the Seasoning Rub

  • In a gallon sized baggie, mix together the seasoning ingredients. Set aside.
  • Brown the Meat

  • Turn on the pots Sauté setting (high temperature).
  • Place the roast in the baggie with the seasoning mixture after cutting it into 2-inch cubes. Shake the baggie to evenly distribute the seasoning over the meat.
  • When the pot is hot, add the oil. Then add half of the steak cubes in one layer. Remove to a plate after lightly browning both sides but not fully cooking. Repeat with the second half of the meat.
  • Make the Gravy

  • Add the butter and onion to the pot. Get up all the browned bits by stirring and scraping the pot’s bottom.
  • Add the garlic, stir. Cook about 20 seconds, then add the red wine.
  • Add the bouillon, consommé, Worcestershire sauce, and thyme leaves. Mix well to dissolve the bouillon.
  • Cancel the Sauté setting.
  • Cook the Beef Tips

  • Add the beef tips back into the pot. Close the lid and seal it.
  • Set the cook time for 25 minutes. High pressure.
  • Allow the pot to sit undisturbed for 10 minutes after the cook time is finished.
  • Release the remaining pressure by setting the steam release knob to Venting.
  • Stir, taste the gravy and adjust salt, if necessary.
  • Serve over mashed potatoes, rice, noodles, or cauliflower rice.

If the gravy is not as thick as you would like, combine 2 tablespoons of cornstarch and 2 tablespoons of cold water in a cup and whisk until dissolved. Restart the sauté function, then stir the cornstarch slurry into the simmering sauce. Stir until thickened, then turn off the pot.
