All you need is a few baby Dutch potatoes, some butter, garlic, fresh herbs (or dry herbs, depending on what you have on hand), and some olive oil. It will be covered with a lid and cooked slowly until it is perfectly crisp-tender.

The Best Potatoes to Use in the Slow Cooker
Look for small potatoes with a diameter of 1 to 2 inches.
As well as fingerling and baby potatoes, unpeeled small red or waxy yellow potatoes also work.
Cut each potato in half lengthwise if it is on the larger side.
You can also mix your potatoes, as I did in the pictures you see here. I used a combination of baby yellow potatoes and small red potatoes, and I cut the red potatoes in half to ensure even cooking.
Please be aware that using large russet potatoes in this recipe will not work. Make this simple recipe for roasted potatoes in a slow cooker if you want to use large russet potatoes!
Potatoes: For this recipe, small, unpeeled potatoes (such as baby yellow potatoes, small red potatoes, or even fingerling potatoes) work best. You can even use a variety of those mixed together. But keep in mind that large russet potatoes won’t work with this technique. Extra virgin olive oil: I adore how this recipe uses extra virgin olive oil because of its delicate, buttery flavor. However, you can also substitute any other oil with a neutral flavor, such as avocado, vegetable, or canola oil.
Freshly minced garlic elevates this straightforward recipe, but you can also use 1 teaspoon of granulated garlic powder if you’re short on time or don’t have any on hand.
In the grocery store, look for kosher salt alongside regular iodized salt (it has a milder flavor). If you only have iodized salt on hand, use that instead.
If you want to add more vegetables to the potatoes, replace one pound of the potatoes with one pound of carrots that have been scrubbed and cut on a diagonal.
If you want to make garlic-herb potatoes, cook the potatoes as usual and then add fresh chopped herbs (such as flat leaf parsley, basil, thyme, or rosemary) afterward. To get the most garlicky flavor, also make sure to use fresh garlic rather than garlic powder.
If you want to prepare garlic-Parmesan potatoes, simply top them with freshly grated Parmesan cheese (either traditional or vegan Parmesan). For the best flavor, I like to add mine right before serving.
