This five-star Stuffed Salmon is the kind of epically impressive, paradoxically simple recipe that will have you swearing off ever going out to eat again. It features tender, juicy salmon fillets, a dream-boat filling of cream cheese, spinach, mozzarella, and Parmesan, and only 10 minutes of prep.
After all, you’ll ask yourself, why should you dress up, spend a lot of money, wait for a table, and endure exorbitant wine markup in a restaurant when you can prepare a chef-quality dish like this chic salmon stuffed with spinach at home?
This Friday, Ben and I are having this simple stuffed salmon dinner, and I can’t wait.
We are celebrating Valentine’s Day at home because, among other reasons, we never have a great dining experience on this busy holiday, even at restaurants we usually enjoy, and because it has been a long time since I’ve actually eaten a home-cooked meal due to the demanding five days I spent finishing up my last (hopefully final) round of cookbook edits.
My ideal romantic dinner at home involves salmon stuffed with spinach and a crisp glass of wine (wine pairing suggestions for salmon are below).

What type of cream cheese should I use for the stuffing?
I used whipped cream cheese when preparing this recipe for the first time. That was a mistake in my opinion because it did not hold up as well as I had anticipated. I remade the Stuffed Salmon using regular cream cheese and added shredded mozzarella to improve both the dish’s overall look and flavor.
Cream cheese, mayonnaise, beaten egg, and old bay seasoning should all be combined in a bowl. Mix thoroughly, but don’t worry if there are some lumps.

Can I use Frozen Salmon for this dish?
You sure can. If you can find it, fresh salmon is ideal, but frozen salmon is a close second. Just be sure to fully defrost the salmon before stuffing it.
*These days, I purchase Alaskan salmon that is delivered frozen directly from the Alaskan supplier.
➕ Costco Stuffed Salmon Cooking Time
Uncover the salmon and bake for 30-35 minutes in an oven that has been preheated to 350 degrees Fahrenheit (177 degrees Celsius). Place the baking dish on a rack in the oven that is one-third of the way down.
When the Costco stuffed salmon reaches a safe internal temperature of 165F (74C), it is fully cooked. Check the temperature of the stuffing by inserting a meat thermometer in the center of it.
The safe temp for fish, including salmon, is 145F (63C). You must cook stuffed salmon to 165F because it’s a mixed casserole dish (USDA). Though the risk of food poisoning is small, it’s something to be aware of.
When the salmon was cooked to the relatively high safe internal temperature, I did not find it to be dry. After cooking the salmon, garnish with freshly squeezed lemon juice and black pepper. You don’t even have to worry about that because this dish already has parsley as a garnish. .
