What Grade of Meat is Prime Rib?
Keep in mind that just because you ordered a “prime” rib, that doesn’t necessarily mean you got USDA Prime. Over the past decade or so, most markets have switched to USDA Choice Grade prime rib roast in place of USDA Prime Grade prime rib due to its higher price and diminishing supply. The majority of the “prime ribs” we purchase at the market are USDA Choice quality.
You’ll probably need to place a special order from your butcher if you want USDA Prime prime rib, which has more fat marbling throughout the meat and can easily cost 50% more per pound.

How Many People Does Prime Rib Roast Serve?
Seven ribs from a full rack of prime beef can easily feed 14 to 16 people (or more!). When I’m feeding a crowd, I cut the roast in half (3 ribs on one roast and 4 ribs on the other) and cook them in separate ovens because a full rack won’t fit in my oven.
When estimating how large a roast you’ll need, the butchers I spoke with advise assuming two people per rib. In my experience, thats a LOT of meat!.
Three people per rib is sufficient for the roasts we receive and the amount of food we serve in addition to the roast. Aim for two people per rib if you want to be on the generous side and have plenty of leftovers.
