I realize that baking a steak might sound strange because that is not how we have been taught to prepare steak. Steak should be grilled, seared, but not baked.
But this is one of those less popular cooking techniques that really ought to gain more popularity. The fact that you can cook a steak from frozen is the best part of this. Additionally, I don’t know about you, but I have a really bad sense of timing when it comes to planning, so when I want a steak, it rarely (see what I did there?) defrosts by the time I want to eat it.
Regarding the steaks we eat, we get them from the Primal Guys, a fantastic Colorado-based business that sells grass-fed, grass-finished beef. We receive the bulk share items, so we have access to a wide variety of cuts that I wouldn’t typically consider buying. This time, we got a ribeye steak in our pack. Wasn’t Rob happy? Steak for dinner. However, it was already 5:00 p.m., which is far too late to begin thawing a steak and have it ready in time for dinner that day. What’s a girl to do? Cook it frozen, of course.
Oh, and the side of bacon and sauteed onions is probably the most crucial component of any steak. Yeah, bacon, because adding pig to cow is only natural. As delicious as this steak is, I’m sorry but I can’t capture it in a photo that does it justice.
How to Cook Frozen Steak in the Oven
I first made Instant Pot steak which was a hit. Since I occasionally forget to defrost meat in time, I had to figure out how to cook it well when it was still extremely hard.
Then came frozen in steak in air fryer. Another excellent method if you have access to that countertop machine If not, I figured I’d share this additional, “traditional” approach. Everyone’s home has an oven and a baking sheet. It’s likely that if you bake, you’ll also have the cooling wire rack you’ll need.
It will be useful if you buy meat in large quantities. We place a large order at the start of the year so that we have access to a large freezer full of protein all year.
We always buy beef, and occasionally we’ll also buy half a pig, depending on what the local farmers have available. It is great. If you have never done this, it will change your life and save you a ton of time and money. If you’re forgetful like me, we also have instructions on how to cook frozen bacon. Simply defrost, cook, and enjoy.
Of course, I make every effort to eat out the night before, but it doesn’t always work out that way. More ice may form on the outside the longer it sits. Just scrape that off before quickly browning the exteriors on the stove.
To me, the exterior seasonings of beef are what matter most when it comes to recipes. On the baking sheet, you can simply sprinkle salt and pepper, or you can use our steak dry rub. In either case, adding this rosemary butter to the top once it is served is a great addition. It will melt completely and produce a ton more deliciousness.
Depending on how thick your pieces are and whether you want them rare or well-done, the cooking time will change. You can use this steak temperature chart to get it just right. Use an instant read thermometer to test if you want them medium rare, etc. It will take a little longer for thick cut pieces to reach the desired level of “doneness.”
You should take them out five degrees before it’s cooked to perfection for you. the internal temperature drops after 5 to 15 minutes of rest. will rise another 5-10 degrees F.
To cook the steak only on the outsides so they are browned, you will first heat a pan on the stovetop with some hot oil. You could also use a grill plate if you have one to give them a more barbecued appearance. It usually works best to cook the steak for 2-3 minutes on each side.
The same procedures could be used with thawed steaks; baking would just take less time. When you have a large group and don’t want to spend the entire time standing by the grill, sheet pan steaks are excellent. The texture of these and the best grilled and smoked steaks is the main distinction.
With those techniques, you’ll get a crisp exterior, but you’ll need to focus on them a little more than you would on these. Here is a quick rundown of the procedure:
Seriously, home cooks everywhere are astonished by how well these turn out. Your steaks can now be frozen, so you won’t have to worry if you forget about them before dinner.
If you have leftovers allow them to cool completely. Wrap each piece individually in plastic wrap to seal in the juices before slipping it into a small freezer bag. Refrigerate and reheat within 3 days. When reheating, drizzling some onion gravy on top is fantastic.

You might never need to defrost anything again if you combine this with some frozen okra in an air fryer. Give our steak in an air fryer a try as well if you buy in bulk and DO remember to thaw them beforehand. Avoid skipping the step of wrapping each piece in bacon; it is incredible.

Thawing Steaks
Because frozen steaks are, well, frozen, it requires some advance preparation to thaw them out and have them ready for dinner. But fear not, it is best to cook frozen steaks while they are still extremely hard.
Don’t pre-thaw your frozen steaks. The reason is that when you brown a steak in a pan, the outside will heat up enough to form a nice crust while the interior will stay nice and cold, preventing any lingering “graying” of the meat closest to the surface.
The interior of the steak will gradually thaw and warm to the desired temperature as you cook it in the oven. You will remove the gray band of meat encasing your delicious medium-rare steak because the interior is heating up in the oven rather than the pan, which results in a more tender steak and more moisture.

How to Freeze Steaks for Cooking:
Make sure your steaks are packaged to prevent ice crystals and freezer burn if you plan to cook them from frozen. Your steaks, if you ordered them from ButcherBox, have already been expertly packaged. Try wrapping your steaks firmly in plastic wrap and freezing them flat on a baking sheet if you bought them from the butcher or the store. When you’re ready to cook them, place them in sturdy freezer bags.
