It is important to note that you should NEVER, EVER open the roaster during cooking before we get to the recipe. The meat thermometer is crucial because it allows you to know when something is done without having to lift a finger. Food is self-basted in a roaster, but when the lid is lifted, everything is disturbed. If you decide to do it in your oven, make sure everyone in the house knows not to lift the lid until the meat thermometer indicates doneness. Depending on how you like your meat cooked, the roast should take between 13 and 15 minutes per pound to complete.
You can use these meat temperatures as a guide when cooking prime rib to determine how well done you want it. Prime rib is typically thought to be best served medium rare, but not everyone agrees.
How To Cook A Prime Rib In An Electric Roaster
Now first things, first, I’m assuming you already own an electric roaster but if you don’t I can recommend the Oster 18 qt model (great for roast turkey too). You can probably do this recipe in the oven with similar results, but I have only done it in a roaster. You will also need a meat thermometer. It is important not to open your roaster during cooking so I recommend an electric meat thermometer like this one that can be read outside of the roaster. Make sure your thermometer has fresh batteries!
