How to cook beet noodles?

I try to complete a full day’s worth of tasks in the last hour of almost every day. I get up at a decent hour, which is around 7:30am, and quickly change into sweats to take our puppy, Paprika, for a walk.

Next, I fritter my time away. I plan new menus, experiment with Paprika, practice yoga, and unwind over a late lunch, which frequently includes a cappuccino. Around 3 o’clock, a slight panic sets in as I realize I haven’t done anything more than think. By 4 o’clock, I’m rushing through my to-do list, rearranging my priorities, crossing things off, and generally losing my cool with anyone or anything that stands in my way.

To put it another way, I have a dangerous mix of epic procrastination and a strong desire to feel productive every day.

I shift into 8th gear at 7 o’clock and rummage through the refrigerator to find something for dinner. I need quick dinner ideas, and lots of them.

This dish is straightforward, but you can modify it by:

  • Add different cheeses and herbs to change the flavor. Think feta and fresh oregano and lemon for a Greek flavor. Or goat cheese and fresh thyme for more a French flavor.
  • Add nuts such as walnuts, pecans or pine nuts for a layer of extra flavor.
  • You can add a protein such as cooked pieces of chicken or shrimp to make it more of a meal.
  • Eat this cold as a salad. Try any of the above and just eat it cold.

    I’ve shared several recipes with spiralized vegetables (links at the bottom of the post), but never any with beets. And I’ll tell you right now that not all beets want to spiralize. In fact, I made a huge mess while experimenting with different beets until I got it right.

    Be aware that handling beetroot may cause your hands to become stained, so you might want to wear gloves.

    Step 1: Preheat the oven by setting it at 450°F. Obtain a baking sheet, coat it with nonstick cooking spray, and set it aside.

    Step 2: Make your beet noodles any way you want. After that, either combine them in a sizable bowl with the olive oil, garlic powder, salt, and black pepper.

    Alternatively, arrange them on the baking sheet in a single layer. Pour the oil and spices over top and mix well.

    Step 3: Put the baking sheet in the preheated oven, and bake for 10 minutes. You want them to have the consistency of thick pasta, but you don’t want them to be too soft.

    Take a bite, and if you like it, remove them. If not cook a few more minutes.

    Step 4: Remove the finished beet noodles and place them in a serving bowl. Noodles should be combined with fresh basil, and Parmesan cheese should be sprinkled on top before serving. If you want a little heat, you can add a shake of hot pepper flakes.
