In terms of rice noodles, China has a sizable population. For instance, we have Guangdong wide rice noodles, Shanxi cold rice noodles, and these rice stick noodles (also known as rice vermicelli noodles). We sampled a lot of rice stick noodles during my most recent trip to the lovely Yunan province, where they are one of the most popular foods. We tried rice stick noodles in stir-fries, salads, and soups, among other dishes. In the past, the only rice stick noodle soup available in my hometown was three treasure rice stick noodle soup with tomato, cucumber, and ham.
I am using dried rice stick noodles. We have freshly made rice stick noodles, but finding them outside of China might be difficult. Usually, I re-soak them in the previous night. Cook the rice noodles in hot water for 3-5 minutes after soaking. It will become soft but chewy. Drain completely and stir fry with protein, vegetables or mushrooms. Really quick and easy.
And my personal sauce with this stir fry is Laoganmas dou-chi chili sauce. If you do not have one bottle at home, I would recommend replacing it with other chili sauces. A light spicy taste can highlight the whole dish.
I always have one bag of rice stick noodles in my kitchen cabinet after returning from that trip. And the Chinese version in fact looks like this. Beautiful, right?.
I appreciate you stopping by and hope you enjoy this simple chow mein with shredded cabbage.

If you’re just learning to make Asian dishes that call for rice noodles, like pad thai or perhaps a soup or stir-fry, it can be very confusing. Because rice noodles, like Italian pasta, come in various sizes and cook at various rates, there is no one-size-fits-all method for cooking them. And sometimes those packages lack cooking instructions altogether or have confusing instructions written in an unfamiliar language.
So, you may have questions. Do rice noodles need to be soaked before cooking? Should they be soaked in hot or cold water? We have the answers. Heres how to prepare rice noodles perfectly. Vermicelli, flat rice noodles, and the wider, broad flat noodles that are frequently found fresh and used in dishes like pad see ew, can all be prepared using these tried-and-true methods.
Many Asian dishes frequently contain rice noodles as an ingredient. Being gluten-free allows you to use dried ones in a variety of ways, making them a great and practical pantry staple to keep on hand. However, you’ve probably had some disappointment with rice noodles because, if they’re not cooked properly, they can quickly become completely inedible mush.
