This recipe for homemade beef tips and gravy is flavorful and absolutely delicious. In just 30 minutes, it’s cooked to fork tender in a gorgeous thick gravy. It’s really just the perfect combination.

I appreciate that it only takes about 45 minutes to prepare and that it uses ingredients I always keep in my pantry. It feels like a very simple dish to prepare because so much of that time is hands-off time.

Look for beef tips cut from sirloin or tenderloin that are 1″-1″ in size. 5” cubes. In order for the beef to become tender if you use stew meat (cut from the chuck or rump roast), it will need to cook for a lot longer.

Oil: Since it helps prevent the beef from burning and sticking to the pan’s bottom, oil is the best fat to use when sautéing beef tips.

Using beef broth to cook the beef tips instead of water allows you to season the meat from the inside out. It also adds tons of beef flavor to the gravy.

Sauteed onions and garlic give the gravy a slight sweetness and umami flavor that improves the overall flavor of the dish.

You can distribute the flavor evenly throughout the dish by using both fresh onion and garlic in addition to the powdered varieties. This recipe for homemade beef tips and gravy comes together quickly. The ultimate comfort food is made with cubes of tender beef smothered in brown gravy.

  • 1 1/2 pounds stew meat (cut into 1″-1″ cubes), cubed chuck, or sirloin tips 5” cubes) .
  • 1 1/2 teaspoons fine sea salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 3 Tablespoons all-purpose flour
  • 3 Tablespoons olive oil
  • 2 1/2 cups beef broth (divided)
  • 1/4 cup butter (1/2 stick)
  • 1 medium onion (finely diced, about 1 cup)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried parsley
  • 1/4 cup all-purpose flour
  • Diced fresh parsley (optional, for garnish)
  • To a large mixing bowl, add the beef cubes. Beef cubes should be thoroughly patted with a paper towel until dry. Add salt, pepper, rosemary, onion, and garlic powder to the beef. Stir the beef with a wooden spatula to coat it completely. The flour should be evenly distributed over the beef cubes after being seasoned. (Some of the beef pieces may need to be broken. You should coat every side of the cubes because they have a tendency to stick together. ).
  • Heat a large lidded Dutch oven over medium-high heat. Oil should be added, then stirred to coat the pot’s bottom. When the oil is hot, add the beef and cook it for a few seconds before stirring it. Continue to sear on all sides until golden brown.
