How to Slice Meat Thinly
In many well-known Japanese dishes, the main ingredient is thinly sliced beef or pork. For mouthwatering Japanese dishes like Sukiyaki, Okonomiyaki, and Gyudon, here’s how to slice meat thinly.
- Meat of the highest quality ((tenderloin, top sirloin, strip loin, rib eye, pork loin, or any cut of meat that is a little bit more lean and a little bit more firm)) ).
- Put the meat in a large freezer bag in a single layer.
- Remove the air from bag and close tightly.
- Freeze the meat for 1 hour on a metal tray (so the heat transfers more quickly). Depending on the size and fat content of the meat, between 5 and 2 hours.
