While Ray enjoys many dishes with lots of juicy ‘broth’ reminiscent of a soup, I prefer my food less soup-like (aka my Potato Chowder with Corn & Bacon). I treat these pressure cooker gizzards as a stand alone protein on my plate, where Ray ladles his gizzard soup into a bowl.

But if you’re trying to avoid grains or carbohydrates, simply leave out the rice and eat the gizzards straight from the broth, or replace it with cauliflower rice.

Like most people, I avoided offal (also known as organ meats or other strange parts with gristle) when I was younger. But my Grandmother and Mom eagerly enjoyed them every chance they got.

Gizzards are tiny, have a flavor similar to dark chicken meat, and if cooked incorrectly, can have a chewier, tougher texture.

In summary, gizzards are just another muscle, just like other muscle meats that we all regularly eat, so there’s no need to be concerned about them!

Oh, and you can always substitute Turkey Gizzards, they will taste the same only be slightly larger.
