You can’t serve a roast without gravy, diet or not! This simple keto turkey gravy recipe produces a rich, thick, and smooth brown gravy.
Now that I have my own, it seems like a cheat even though it tastes, feels, and looks like regular gravy.
Last weekend, we roasted a whole turkey for Canadian Thanksgiving, so I used the chance to snap a picture of my low-carb turkey gravy to post here.
This simple keto gravy recipe is prepared using the same ingredients and methods as a traditional gravy. Rather than using a flour or starch for this homemade gravy, use xanthan gum – a keto thickener.
I mix that xanthan gum with a couple other ingredients instead of making a roux and then add it to my low-carb gravy base.
This keeps the gravy from clumping and guarantees a silky smooth texture that’s ideal for the holidays or even just a Sunday roast!
This homemade keto gravy is just a good gravy in general; no “for a diet thing” modifier is required, even though the ingredients and preparation method may be slightly different!

The recipe makes about 2 ¼ cups of keto-friendly gravy, which I’m calling 8 servings. (Just over ¼ cup per serving).
Each serving comes in at 69 calories, with just under 2 total grams of carbohydrate per serving.
There’s about 0. 3 grams of fiber and less than 2 grams of net carbohydrates per serving make it ideal for anyone following a ketogenic diet.
This recipe uses really simple ingredients, that will be easy to find in most grocery stores.

Ingredients:
- 1 cup roasted turkey pan drippings – This is the base of your gravy and adds incredible depth of flavor.
- 2 cups low sodium chicken broth – Use a good quality broth for the best results.

Instructions:
- Whisk together the butter, turkey drippings, and chicken broth in a saucepan over medium heat.
- Bring to a simmer and cook for about 5 minutes.
- Add the garlic powder and Worcestershire sauce. Mix well to combine and simmer for an additional minute.
- Take the pot off the heat and whisk in the xanthan gum. Mix well to combine, then let rest for 3-4 minutes to allow it to thicken.
- Season with salt and pepper as needed.

Tips:
- Don’t add more xanthan gum unless you’ve let the gravy sit for at least 10 minutes before adding more. If you want a thicker gravy, add 1/8 tsp more xanthan gum and allow it to rest. Too much xanthan gum and your gravy will be slimy!
- For a richer gravy, add a tablespoon of bacon fat along with the butter.
- If you don’t have xanthan gum, you can use cornstarch to thicken the gravy, but you’ll have to add a few carbs per serving. Simply whisk 2 tbsp of cornstarch into 4 tbsp of water or chicken stock and mix well. Add to the gravy and boil to thicken.
- Got lumps? Use an immersion blender to get rid of the lumps in your gravy.

How to Make Keto Turkey Gravy

In a small bowl, mix savory, xanthan gum, onion powder, garlic powder, pepper, and salt. Make sure it’s well combined, with everything well distributed.
Take out your turkey breast or roast turkey from the roasting pan and inspect the turkey pan drippings.
If it seems a bit dry, add a small amount of the stock to the pan. Scrape the bottom of the pan, loosening any thicker / brown bits and stirring it into the liquid.
To enable the fat to separate, strain your turkey drippings into a large measuring cup and leave it there for about ten minutes.
The majority of the fat that rises to the top can be poured off or skimmed off, and if butter is not being used, it can be measured out into ¼ cup.
Once the fat is skimmed off, top up remaining drippings with stock to make 2 cups of liquid.
In a small saucepan (you can use a medium saucepan if you usually mix things with an immersion blender!), whisk together the liquid, butter (or measured dripping fat), and seasoning mixture.
Bring to a boil over medium-high heat, then turn burner down to low heat.
Simmer for 2 minutes.
Remove from heat, season with additional salt and pepper, to taste.
Transfer to a gravy boat, if desired, and serve hot!
As is, this recipe makes a medium-thick gravy. Aim for a thicker gravy than you desire because it’s always easier to make it thinner than thicker.
In the beginning, add ¼ teaspoon (or slightly more) extra xanthan gum if you know you want a REALLY thick low-carb gravy.
Once the gravy has thickened, thin it by whisking in a small amount of stock until the desired consistency is achieved.
If you feel the need to thicken the gravy even more, combine ¼ teaspoon xanthan gum with extra dried herbs (at least ½ tsp) and add it to the mixture.
Leftovers can be transferred to an airtight container and kept in the fridge for 3 days or so.
Reheats well in the microwave or on the stovetop.
