- 1 Quorn Meatless Roast (defrosted and de-skinned)
- 1 lemon, zested and squeezed
- 3 garlic cloves
- Salt and Pepper
- 1 tbsp finely chopped rosemary
- 1 tbsp finely chopped parsley
- Grilled veggies
- 1 butternut squash, sliced into wedges
- 2 red onions, cut into quarters
- 1 bunch of asparagus spears, trimmed
- Olive oil
- Preheat the grill to 425° F.
- To wrap the Quorn Meatless Roast, cut two layers of aluminum foil big enough to fit around it. Spread some olive oil on the foil and place the roast on it.
- Add a generous amount of salt, pepper, lemon zest, lemon juice, fresh rosemary, and finely chopped parsley to the dish.
- Carefully close the lid, place the grill away from any open flames, and cook for 45 minutes.
- After taking it off the grill, let it rest for five minutes before slicing.
- In the meantime, thoroughly season and toss the veggies and garlic in olive oil. Place on a hot barbecue grill and cook until soft and charred. Serve with Quorn Meatless Roast and enjoy!.
