Instructions:

- Rinse turkey and pat dry with paper towels.
- Rub turkey with olive oil and season with salt, pepper, garlic powder, onion powder, and cayenne pepper (if using).
- Place turkey in a roasting pan and roast for 3-4 hours, or until internal temperature reaches 165 degrees F (74 degrees C).
- While turkey is roasting, make the gravy. In a large saucepan, melt butter over medium heat.
- Whisk in flour and cook for 1 minute.
- Gradually whisk in chicken broth, milk, and heavy cream.
- Bring to a simmer and cook until gravy thickens, about 5 minutes.
- Season with salt and pepper to taste.
- Once turkey is cooked, remove from oven and let rest for 10 minutes.
