One recipe that has been around for a very long time is turkey Tetrazzini, which I also discovered in my old recipe box.
A tasty turkey-and-creamy mushroom-sauce pasta casserole is baked until hot and bubbling, then topped with cheese.
In this recipe, I use fresh mushrooms, but you can substitute any other vegetables you like—carrots, peas, and peppers are some of our favorites.
Instead of using “cream of” soup, spreadable cream cheese adds extra richness to this simple tetrazzini recipe. Although the basic variety is certainly acceptable, we really enjoy adding a little bit more flavor with the herb and garlic or garlic and chive flavors.
Not only is this a fantastic way to use up leftover turkey during the holidays, but it tastes just as good any time of year. If you don’t have any turkey, you can cook some chicken breasts or use rotisserie chicken instead!
This recipe reheats easily, so you can prepare it in advance or serve it again for a tasty leftover supper! Just be careful to cook the pasta al dente to prevent it from becoming mushy, and you can add a small splash of milk if necessary.

- Seasonings: Garlic, Italian seasoning, and crushed red pepper provide a flavorful kick.
- Topping: A sprinkle of breadcrumbs or slivered almonds adds a satisfying crunch.
Variations on a Theme: Exploring Different Flavors

- Veggies: Add chopped spinach, broccoli, or bell peppers for extra nutrients and color.
- Spices: Experiment with different herbs and spices like thyme, rosemary, or paprika.
- Cheese: Swap cheddar for Gruyere, Swiss, or Monterey Jack for a different flavor profile.
- Protein: Substitute turkey with leftover chicken, cooked shrimp, or even plant-based options like tofu or tempeh.
- Wine: Add a splash of white wine to the sauce for a deeper flavor.
Tips for Making the Perfect Turkey Tetrazzini:
- Cook the pasta al dente: This ensures it won’t become mushy in the casserole.
- Don’t overcook the mushrooms: They should be tender but not soggy.
- Use high-quality ingredients: Fresh herbs, good-quality cheese, and flavorful broth will make a big difference in the final dish.
- Season generously: Don’t be afraid to taste and adjust the seasonings as you go.
