What You’ll Need:

For the Turkey Burgers:

  • 2 lbs ground turkey (93% lean)
  • 2 eggs
  • 2 teaspoons salt
  • 1 cup shredded cheese (or 2 tablespoons nutritional yeast + 1 tablespoon olive oil for a dairy-free option)
  • 1 tablespoon chopped rosemary (or your favorite chopped herbs)

For the Sheet Pan Meal:

  • 12-16 oz shredded Brussels sprouts (or your favorite roasted vegetable)
  • 4 medium potatoes or sweet potatoes (or burger buns)
  • 2-4 tablespoons olive oil, divided
  • 1-2 teaspoons salt, divided
  • 1/2 tablespoon chopped rosemary (optional)

Instructions:

  1. Preheat your oven to 400°F and line a sheet pan with parchment paper.
  2. If you’re making potatoes, microwave them for 4-5 minutes to pre-cook them slightly.
  3. While the potatoes are cooking, combine all the turkey burger ingredients in a medium bowl and mix thoroughly.
  4. Use a large scoop or measuring cup to portion out the burger mixture onto the sheet pan, leaving space for the vegetables.
  5. Toss the Brussels sprouts (or your chosen vegetable) with 1-2 tablespoons olive oil and 1 teaspoon salt, and place them on the sheet pan next to the burgers.
  6. If you’re making potatoes, toss them with 1-2 tablespoons olive oil, 1 teaspoon salt, and chopped rosemary (optional), and place them on a separate sheet pan.
  7. Bake for 7 minutes, then mix the vegetables and rotate the pans.
  8. Bake for an additional 7-10 minutes, or until the burgers are cooked through and the vegetables are crispy. Cooking time may vary depending on the size of your burgers.
  9. If you like a crispy edge to your burgers, broil them for 1-2 minutes at the end of the cooking time.
  10. Let cool for 5 minutes before serving.

Tips and Adaptations:

  • This recipe is easily adaptable to your family’s preferences. Feel free to swap out the Brussels sprouts for your favorite roasted vegetable, like broccoli, carrots, or zucchini.
  • You can also use burger buns instead of potatoes, or serve the burgers with a side of your favorite roasted vegetable and potatoes.
  • If you’re dairy-free, simply omit the cheese and add 2 tablespoons nutritional yeast + 1 tablespoon olive oil to the burger mixture.
  • This recipe makes enough for leftovers, so you can easily enjoy it for lunch or dinner the next day.

Turkey Burger Sheet Pan Meal Adaptations:

  • Brussel Sprouts – swap for your families favorite roasted vegetable.
  • Since everyone has different preferences, I also like to serve rolls and a mix of potatoes. Do what your family prefers! .
  • Cheese: I think using feta cheese or mixed shredded cheese gives the burgers more moisture, so I love to use it. You could also do mozzarella, goat blue etc…. If dairy is off limits, you can use one tablespoon of olive oil or two tablespoons of nutritional yeast combined with one tablespoon of olive oil in place of the cheese.
  • Turkey: If your family isn’t really into turkey, feel free to swap it out for ground beef, pork, or chicken.
  • Herbs: Any kind of herb works well in the winter, but my personal favorites are rosemary and Parmesan or cilantro and feta.

This recipe made enough for leftovers for my family of 5 (2 adults + 3 young kids). For 2lbs of meat, a vegetable and potatoes you need 2 sheet pans. I put the burgers and veggies on the first pan and the potatoes on the second, even though it’s a tight fit. If you only make one pound of the turkey chop meat, you can fit the meat, potatoes, and vegetables onto one sheet pan. If you are not making potatoes you do not have to worry about your pans .

For 5 ingredient Friday I made a video on how to make this Turkey Burger Sheet Pan Meal. You can check the video out here and the rest of my 5 ingredients or less recipes here. We all enjoy these differently, when you make them let me know how you like them best!
