  • Simmer vegetables, herbs, and spices in a large stock pot over medium-high heat until softened.
  • After adding the meat, tomatoes, and broth, boil the mixture for 15 to 20 minutes.
  • Stir in fresh herbs and serve.

  • You can use any kind of vegetable you enjoy in soup for this recipe. You can use fresh, frozen or canned. Remove the peas if you don’t like them, or use any leftover Oven Roasted Vegetables instead.
  • A great way to add texture and body to soup is to add potatoes or pasta. When serving, rice and pasta should be cooked separately and then combined. You can add potatoes to the soup at the beginning along with the vegetables, and simmer it until the potatoes are soft.
  • Any variety of chicken or turkey, whether chopped, shredded, or ground, will work.
  • Use a slow cooker to make turkey soup by first cooking the diced onions in a skillet and then adding them to the crock pot with the remaining ingredients (parsley should be added last). Cover and cook on low for 6-8 hours.

Leftover turkey will be safe to eat for about 3-4 days if properly stored in your fridge. Or you can freeze it for up to 6 months.

  • Olive oil
  • Veggies – Onions, carrots, celery, garlic, corn and peas. However, you can truly use any vegetable you have on hand, including beans, green beans, zucchini, and mushrooms.
  • Herbs and spices: bay leaves, fresh parsley, dried oregano, dried thyme, salt, and pepper This is my favorite soup combination, but feel free to add other herbs you like, such as Italian seasoning, rosemary, or basil.
  • Use white or dark meat from leftover turkey; chicken can also be used. If all you have left over from Thanksgiving is ground turkey, you could even substitute that. If you’re in the mood, just devour the turkey carcass and make soup with the remaining meat.
  • Can of diced tomatoes with the juices.
  • My preference is to use low-sodium turkey broth. Chicken broth can be substituted.
