Keto Turkey Tetrazzini in a Cast Iron Skillet
One of my favorite things about my cast iron skillet is how heavy it is. Ha! You know I’m kidding.
I absolutely adore being able to begin a meal in a skillet, LEAVE it there, and finish it all in the oven—including the lid—if necessary!
If that’s not a testament to my laziness, I don’t know what is.
Seriously, though. I LOVE my cast iron skillet. That’s why I asked my designer to use my heavy, cumbersome friend for my awesome Keen for Keto logo.
Sometimes I feel like my cast iron love is a little weird. Similar to how people adore abandoned puppies who are limping, have half of their tails missing, and have an unknown substance dripping from their eyes

My gleaming stainless steel pots and pans are tucked away in the cupboards, but my cast iron pan gets to lie greasy on its stovetop bed all day and night.
I can’t help it. That’s what love does to you.

You can start it in any old skillet, pour into a baking dish, and bake it that way. Congrats for not being as lazy as me.

This is probably one of the most accidental recipes I’ve ever posted here. No, really.
“Well, I have this half chunk of mozzarella, and leftover turkey from Thanksgiving (or Easter, or whatever it was), and some mushrooms my kids won’t eat anyway,” the person said on one of those days.
And then some Pinterest searching that ended in just making something up. Later, when I looked again, I discovered that there was a dish called turkey tetrazzini that included pasta and similar ingredients.

Truth be told, that’s only part of the story. I’m a single mom of 4 kids, going to school full time for my master’s degree.
