Roasting a whole turkey is notoriously tricky—even confident cooks can find it challenging. How long and at what temperature should you cook the turkey for the dark meat to be done but the white meat to be still moist? Should you brine? Which rack position should you use? Should you cover the turkey with foil?

Help is here—at least for some. In order to help you roast a juicy and tender holiday bird without looking up recipes, preheating the oven, or adjusting the temperature, GE recently unveiled a new oven cycle for its smart ranges and ovens. The oven setting, which goes by the name “turkey,” is actually a free software update for the hundreds of thousands of people who own smart ovens and ranges from GE Profile, Café, and Monogram. If you have one of these models, you can download the updated setting, which guides you through the cooking process, by opening the GE SmartHQ app on your phone.

We discovered that it does have benefits over standard roasting in a hands-on assessment conducted in our range lab, but there is one catch.

We roasted three turkeys, one at a time, in the Café CGB500P2MS1 gas range. After roasting the first turkey on convection roast, we cooked the second turkey completely using the new turkey setting. We proceeded with a third bird, cooked on the new setting, following an incident with the second bird (more on that below). The three turkeys were all slightly under 15 pounds, which is the typical weight of turkeys sold in stores during the holidays.

Turkey Mode Tips & Tricks for Maximum Juiciness:

Probe Placement is Key:

  • Insert the probe tip into the deepest part of the turkey breast, pushing it down without touching the bone.
  • The gray handle should touch the skin, and the probe tip should be in the thickest part of the turkey (this is the slowest heating spot).
  • Don’t let the probe tip point outwards, touch the cavity, or poke through the surface.
  • Refer to the SmartHQ app or LCD screen for rack placement (usually low in the oven).
  • If needed, turn the pan to avoid straining the probe wire.
  • Double-check with a second thermometer for extra assurance, especially if you have picky eaters.

LCD Screen Tips for Ranges and Wall Ovens:

  • Your oven probe will reach 60 degrees, and then an estimated timer will appear on the screen.
  • The closer it gets to completion, the more accurate the time will be.
  • For double ovens and slide-in ranges with LCD screens (PHS93X): Don’t panic if the timer takes a few seconds/minutes to recalculate when you switch between cavities.

GE’s Turkey Setting Can Save You Time

In our assessment, the turkey setting shaved about 40 minutes off the total cooking time. The dedicated-cycle bird took about two hours and fifteen minutes to roast at 325°F, while the traditional bird took nearly three hours to roast in a 325° oven.

The turkey-cycle bird saved more time than the other since it didn’t require preheating, and we didn’t feel the need to open the oven door to check on it because both birds cooked at the same temperature. Every time we did that with the traditional roast turkey, the cooking process was probably slowed down by the oven’s decreased temperature. For your holiday meal, a 40-minute time savings can be quite significant if you have sides to bake in addition to the turkey.

The App Provides Real-Time Temperatures

The uncertainty of when a turkey may be done is a major source of anxiety when cooking one.

By letting you monitor both the oven and your bird’s internal temperature, the SmartHQ app might help ease some of your concerns (see screenshots of the app, below). Although there isn’t a cook time indicator on the display, you can determine when your turkey is done by monitoring the gradual rise in internal temperature. Knowing that information may also discourage you from checking the bird’s progress by opening the oven door—more on that a little bit later.
