Im obsessed with these Cheddar Jalapeño Chicken Burgers. I mean how could I not be? They are decked out with sour cream, GUACAMOLE and salsa. Shouldnt all burgers be decked out like this? I think so.
Many times I just top my burger with cheese and ketchup, but don’t you think that toppings really make the burger? It’s easy to get into a burger and topping rut sometimes. I’ve been doing that for a while, but it’s easy to change things up with a few intriguing toppings. This juicy chicken burger is enhanced by the addition of guacamole, sour cream, and pico de gallo to its pile of shredded cheddar cheese, cilantro, and jalapeños.
You could easily make this with ground turkey or ground beef. Either way the flavors from the jalapeño, cheddar, cilantro and guacamole makes these burgers incredible. Heres a video on how to make these Cheddar Jalapeno Chicken Burgers with Guacamole!.
Fresh Cilantro: You can replace it with chives if you’re not a fan of cilantro.
Chopped Jalapeño: If serving children, you can omit the jalapeño entirely; when I make chicken burgers for Poppy, I usually omit it or use a smaller amount.
Shredded Cheddar Cheese: I love to use white or orange cheddar cheese in this recipe for chicken burgers, but Monterey Jack or Pepper Jack work just as well.

- Spice It Up: The addition of garlic, shallots, cilantro, bell peppers, jalapeno, cumin, and red pepper flakes adds a vibrant depth of flavor to the patties, elevating them beyond the ordinary.
- Guacamole Goodness: Gaby’s signature guacamole recipe, a harmonious blend of ripe avocados, red onion, chives, lemon and lime juice, jalapeno, and seasonings, adds a creamy, tangy layer that complements the savory burger perfectly.
- Fresh Pico de Gallo: The pico de gallo, a vibrant mix of diced tomatoes, white onion, jalapeno, cilantro, and lime juice, provides a refreshing burst of acidity and texture, cutting through the richness of the guacamole and cheese.
- Melty Pepper Jack Cheese: The sharp, slightly spicy flavor of pepper jack cheese adds a delightful kick to the burger, balancing the sweetness of the guacamole and the freshness of the pico de gallo.

How do you keep chicken burgers from falling apart?
On the grill, chicken burgers that are overmixed and not pressed down firmly enough into patties tend to fall apart. To prevent over-mixing, cut the ground chicken block into smaller 1-inch pieces as soon as you remove it from its packaging and put them in a medium-sized bowl. Subsequently, all the ingredients and spices blend together seamlessly, preventing the ground chicken from being overly mixed.
How to Make Chicken Burgers
Making chicken burgers is easy, whether you cook them outside on a grill or indoors in a cast iron skillet or grill pan. Start by preparing an indoor or outdoor grill or grill pan over medium heat.
Then begin making the burger patties. In a medium-sized bowl, mix together ground chicken, diced onion, chopped cilantro, finely chopped garlic, chopped jalapeño, cumin, paprika, cheddar cheese, salt, and freshly cracked black pepper.
Then using your hands, evenly incorporate everything together without over mixing the ground chicken.
Form the mixture into four ½”-thick patties. Grill burgers over medium heat until cooked through, 5-7 minutes per side.
Serve each patty in a burger bun topped with guacamole and sour cream and any additional toppings needed.
The key to juicy and flavorful chicken burgers is all in the ground chicken you use. A leaner mixture like 98/2 will yield dryer and tougher chicken burgers with less flavor. Thats why I opt for something like a 90/10 or 93/7 mix to make my burgers.
