How to Cook Pork Chops in the Instant Pot
Buy boneless pork chops that are at least an inch thick, have some marbling but no excessively thick fat layer around the edges for the best results. A thin layer of fat will render well in the Instant Pot, but a thick layer must be seared to produce good results.
