Pour the melted suet through a fine cheesecloth to remove the gray bits. Save the strained liquid fat and let it cool. Suet is currently still somewhat soft, but if you melt it and strain it once more, you will get suet that is extremely hard. Your rendered suet has three options: you can use it right away, turn it into suet cakes, or put it away for later use (it will last for several months in a covered container in your freezer).
